Syrup Mixture for Sorbet Recipes

lemon sorbet There are many sorbets which require a syrup mixture.

Sometimes the amount and ratio of sugar and water will vary depending upon the recipe but this is the basic guideline:

Step 1
In a saucepan mix together 4oz (100g) sugar and 1/2 pint (250ml) water (and any fruit zest or fruit juice if the recipe includes it).

Step 2
Gently heat the mixture making sure you stir it continuously until the sugar has fully dissolved.

Step 3
Bring to mixture to the boil then boil it gently for about 5 minutes until you have a syrup. Leave to cool then refrigerate.
