Choc chip ice cream is great on its own or in an ice cream sandwich - recipe here

 

Oliver's White Chocolate Chip Cookies

Ingredients:
3oz (75g) margarine
3oz (75g) brown sugar
1 egg, 5oz (150g) self-rising flour
pinch of salt
small bar (about 50g size) white chocolate (Oliver's favorite is Milky Bar Chunky) - finely grated
small bar (about 50g size) ordinary milk chocolate (Oliver's favorite is Cadbury's Dairy Milk) cut into small chunks
1/2 teaspoon cocoa powder

Method: Cream the margarine and sugar together. Add the egg and beat until mixture is smooth. Stir in the flour and salt until fully mixed and blended in. Stir in the grated chocolate followed by the chunks, then the cocoa powder. Spoon the mixture in circle shapes onto a greased baking tray and then bake in the over for 10-12 mins at 180 deg C, Gas Mark 4 (170 deg C for fan assisted oven). Allow to cool naturally, though we have to say that these chocolate chip cookies are delicious whilst still just warm!

This type of homemade cookie is super for when you want an ice cream sandwich. Chunky and full of chocolate, if you use a couple of these cookies sandwiched either side of your favorite ice cream, it's a winner every time. In fact this recipe for white chocolate ice cream would make a great match for these white choc chip cookies. An all white chocolate ice cream cookie sandwich. Now that's what I call creative, delicious ice cream fun!
